fall lunch: lentil + bean soup

 I had a few interior designer friends over for lunch today.
I served a simple Fall meal of soup + corn bread muffins.
The best part might have been our view…Fall is peaking in Chagrin Falls!

Lentil + Bean Soup
serves 4

1 onion, chopped
1 T olive oil
2 t chili powder
1/2 t salt
1 1/4 c dried lentils
5 c water
1 can (8 oz.) tomato sauce
3 carrots, chopped
3 ribs celery, chopped
1 can (15.5 oz.) black beans, rinsed + drained
3 1/2 oz. smoked Gouda, shredded
2 T fresh cilantro + scallions or chives
sour cream

Sauté onion in oil in Dutch oven over medium-high heat until golden, about 5 min.
Stir in chili powder + salt
Add lentils + water, bring to a boil.  Reduce heat to medium + simmer 5 min.
Add tomato sauce, carrots + celery.  Simmer 10 min.
Add beans + cook until vegetables are tender, about 5 min.
Stir in cheese + herbs.  Season to taste with salt + pepper.
Serve with sour cream + cilantro

Honey Cornbread Muffins
Preheat oven to 400

Ingredients
1 c yellow cornmeal
1 c all-purpose flour
1 T baking powder
1/2 c granulated sugar
1 t salt
1 c whole milk
2 large eggs
1/2 stick butter, melted
1/4 cup honey

Special equipment: paper muffin cups and a 12-cup muffin tin

Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt.
In another bowl, whisk together the whole milk, eggs, butter, and honey.
Add the wet to the dry ingredients and stir until just mixed.

Place muffin paper liners in a 12-cup muffin tin. Evenly divide the cornbread mixture into the papers. Bake for 15 minutes, until golden
