yeah, I love food.
Lunch for me is usually some variation of this concoction.
It doesn’t have a name because it’s never the same.
Staples i keep in my kitchen to make this a quick and easy lunch:
cooked quinoa, homemade vinaigrette, toasted nuts, avocado, bag of greens – arugula, kale or spinach
Warm cooked quinoa (unless it’s warm because you just made it)
Add to warm quinoa: small cubed mozzarella (mix first so it’s gets soft), arugula, toasted almonds, avocado and my left over salmon from the other night.
healthy, filling and delicious!
